Tiramisu

1 package of stella d’oro lady finger cookies
2 cups of prepared coffee
1 package of mascarpone cheese ( 8 ounces) – room temperature
2 cups ricotta cheese or 1 small package ricotta – i dont know haha
1 package whipped cream
2 tbsp of sugar
1 tsp of vanilla extract
cocoa powder
1 tbsp cinnamon

Brew the coffee (or take the leftovers from the morning) and pour into a small bowl. Add a tbsp of cinnamon to coffee and mix. Set aside to cool down a bit. In a mixing bowl, use an electric mixer to mix the mascarpone cheese, ricotta, whipped cream, sugar, and vanilla until smooth. Taste it. If it isn’t as sweet as you’d like, add more sugar.

Get an 8×8 square dish (or anything you want to put it in really). Dip a cookie in the coffee and let it soak a few seconds. Place it at the bottom of the baking dish. Continue with cookies until you’ve made one even layer – its ok if its seems like soggy – that equals yum! Using about half the cream mixture, spread it evenly on top of the cookies. Dust it with cocoa powder. Soak the rest of the cookies and make your 2nd layer of cookies. Top with cream, cocoa, and then I used some hersheys syrup to decorate the top. Cover and refrigerate. Serves 8.

NOTES
*I got chocolate and vanilla lady fingers in one package – they were actually called Margherite cookies
*if you have some Kahlua or Baileys, add it to your 2 cups of prepared coffee. yay for booze
