meatballs
Wednesday, April 1st, 2009I typically do beef, but its good when you mix. so like beef and pork, or veal, whatever you like. Sometimes they have like packages of beef veal and pork in the butcher case.
Equal parts of whatever meat you want (so like 3 lbs total) dont get super lean meat. go with like 80/85 %
1 small to medium sized onion, grated
2 cloves garlic, grated
2 handfuls of bread crumbs
1 egg
good amount black pepper
salt
maybe 1 tsp of crushed red pepper
Combine all the ingredients with your hands. don’t over mix. just combine it. you can do two things: you can pay fry the meatballs in olive oil just to brown the outsides and then you put it in the oven. OR you can just put them straight into the oven. Depending on if you want them to be fatty or not. nothing is better than a fried meatball tho.
Bake them at like 350 for 15 mins or so. If you end up frying then baking, you will probably only need to bake them for like 10 mins. just check on them.
The onion will keep the meat moist. If you feel like the meat feels too wet when you are mixing it, add more breadcrumbs.
