how to feed yourself for $1.14

I made a type of vegetarian chili tonight and it was goooood and very filling. I’m going to break down the ingredients by price. Prices are approximate. I’m not including price of olive oil, salt and pepper, and spices. Also, it would have been better with cumin – but i didnt have any!

1 zucchini, diced ($0.45)
1 yam/sweet potato, diced ($0.55)
1 small onion (.35)
1 clove garlic (.10)
1 can beans (any kind – store brand) (.88)
1 can low fat low sodium beef broth (.88)
1 can diced tomatoes (.88)
1/4 box of orzo pasta (.25) (barilla was on sale)
half jalapeno/a few jalapeno rings/hot sauce/whatever (.25)
1 tbsp chili powder
1 tbsp flour
salt & pepper
2 tsp olive oil

TOTAL: $4.59
FEEDS: 4
COST PER SERVING: $1.14

Directions: Sautee onion and garlic and jalapeno in olive oil until soft. Add yam and zucchini, and chili powder, salt and pepper. Saute 5 minutes. Add tomatoes, broth, beans, and bring to boil. In a small bowl whisk warm water into flour. Add to boiling chili mixture to thicken. Cover and simmer for 15 minutes. Take off cover and stir in orzo, stirring every few minutes. If it becomes too thick – add a bit of water. When pasta is cooked, serve up in a bowl. Would be good with sour cream, tortilla chips.
