Presto Pesto

You dont even have to chop anything. As always, don’t worry about the measurements – they’re just ballpark guesses. Everything in this recipe tastes good – so if you mess them up, its still going to taste good. Good luck!!!!!!

Pesto Sauce
2 cups basil leaves ( how do you know if its 2 cups? just use one bunch of basil from the grocery store – its fine if its not exact)
2 garlic cloves
1/2 cup olive oil
1 tsp black pepper
1 tsp salt
1/2 cup grated parmesan, or romano, or asiago, whatever cheese
juice of half a lemon
*if you have some extra cash – put pignoli/pine nuts in this – do a handful. theyre so yummy – but expensive*

Put all the ingredients into the food processor, and blend until its smooth. If the sauce looks kind of thick after you blend it, then add a little more olive oil (or lemon juice if you want to cut the fat, or even salty/starchy pasta water), and blend again. Take out of food processor and stir into some pasta. You can refrigerate or freeze the sauce for a long time.

*If you want to add some more nutrients, put a half a cup of peas in a bowl, with a half an inch of water, with a wet paper towel over top of them. Microwave for like 1 minute or until theyre defrosted. Mix together with your pasta, and sauce. If you want to use your moms cutlets, just defrost them in the microwave for a few minutes, and put on top of your pasta. Farfalle/Bow Ties would be good with this probs. or penne.

my bolognese sauce

1 package ground turkey (either 93% lean, or 97% are usually your options)
1 small onion
2 cloves garlic
1 big can, crushed tomatoes
1 small can tomato sauce
3/4 cup frozen peas
1/2 cup milk (or half and half, skim, whole, whatever)
salt and pepper
pinch of cinnamon (or nutmeg)
2 tbsps olive oil

In large deep skillet, heat olive oil to medium high heat. Add ground turkey, and break into small pieces with a wooden spoon. Once its broken, add diced onions, garlic, salt and pepper. Saute until turkey is almost cooked thru and onion and garlic are translucent. Add big can of crushed tomatoes and tiny can of tomato sauce and milk. Stir and let simmer on medium high heat for 10 mins. Add pinch of cinnamon and frozen peas and stir until heated thru.

Serve with some kind of wide pasta. Like bowties/farfalle, or rigatoni, something that will hold the sauce. Also, i’ve eaten this like chili when times were tough. It tastes good with rice. Or just with a spoon.

I haven’t been doing very well on the exercise front because of my new work schedule. But that’s not a good enough excuse, so I’ve started back up with the gym, and I’m thinking of signing up for some kind of 5K or something so that I have a deadline/goal, or signing up for a fitness class at the Y. I do really well if i have a timeframe/task to do/someone telling me what to do; if I’ve got no tangible goal – then I’m all willy nilly.

BUT i have lost 1 more pound bringing my total to 34 lbs. Slowly but surely!

Last week I picked out some new glasses (it’d been like 3 years since my last pair). My eyes were hurting way too much wearing contacts all day, staring at a computer screen, and looking at a layout at like 500%. My eyes are sooooo happy now.
