bollywood chicken masala
ok maybe the worst name ever. but this was unexpectedly awesome! i wanted something Indian, and also healthy! It’s pretty much the same method as making chicken cacciatorre but just with different spices.
bollywood chicken masala
1 package boneless skinless chicken thighs, chopped (like 5 thighs)
1 cup flour
half white/ yellow onion, chopped
one hot cherry pepper, seeded and chopped (optional)
1/2 can chick peas
1/2 green bell pepper, chopped
1 big can of diced tomatoes
1/2 cup frozen peas
3 squirts Sriracha
3 tbsp olive oil
1 +1/2 tsp curry powder
1 tsp ground ginger
1 tsp cinnamon
salt
pepper
Saute onions and cherry pepper in olive oil in a big pot, on medium heat for 5 mins. In the meantime, mix flour, 1/2 tsp curry powder, ginger, salt, pepper, and cinnamon on a dish. Coat chopped chicken thigh pieces in flour mixture. Shake off excess from chicken. Turn up heat on stove to medium high. Push the onions and peppers to the outside of the pot, and put in the chicken in an even layer. Turn chicken after like 4 mins (when it has a decent bit of golden brown color on one side). Add Sriracha. Saute for 2 more mins. Add can of diced tomatoes, chick peas, chopped bell pepper and 1 more tsp of curry powder to chicken. Stir with wooden spoons, scraping up browned bits on the bottom of the pot. Put top on pot and boil for 15 minutes. Check consistency…if you’d like it thicker, sprinkle a tsp of flour into the pot, and stir. At this point, you could start to make some couscous. Stir in frozen peas to chicken, heat thru and serve on top of couscous. Serves 4. Time: 45 mins
