My Last Supper.

I’ve decided what my last supper would be.

What would be your last meal on earth?
appetizers: big scallops wrapped in bacon, mariel’s spinach/artichoke dip with pitas, olives & pepperoncinis, also grilled cheese sandwiches (cut into triangles)
main course: cavatellis with ricotta and broccoli with LOTS of crushed red pepper and salt!!!!, mom’s meatballs, garlic bread made with ciabatta bread, lots of salad with aunt debra’s dressing on it
dessert: cheesecake and strawberries and a great cappuccino

What would be the the setting?
the outerbanks – on the beach, without the sand getting in my food somehow.

What would you drink with your meal?
i would drink sangria all night

Would there be music?
probably some ray charles & frank sinatra

Who would be your dining companions?
friends and family probably. but actually, i think my family would suffice.

Who would prepare the meal?
my mom and i

This is so such good. It’s adapted from something I had this weekend, but this is its Mexican cousin. We all have one of those.

Bean Salsa
1 can black beans, drained & rinsed
1 can black eyed peas, drained & rinsed
1 can petite diced tomatoes, drained
1 small box frozen corn
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 jalapeno, seeded and finely diced
1 small red onion, finely diced
1 clove of garlic, finely diced
1 handful of cilantro leaves, torn
2 limes
4 tbsp EVOO

Place frozen corn in large mixing bowl. Dice peppers, onion, jalapeno, garlic and add to bowl. Drain beans and rinse in a collander; add to bowl. Drain tomatoes a bit, leave a little juice; add to bowl. Tear cilantro and add to bowl. Juice 2 limes, add EVOO, salt & pepper to taste.

Temple Univ. Architecture Program Design

My friend Scott just graduated from TU, with an architecture degree and he asked me to design the graduation program. Had to fit a TON of type on each page. So its all a little screwy because I had to rearrange pages to allow for a saddle stitch.

Roma – Housing Options

I’ve been researching housing options in Roma when I go, and I could rent out an apartment similar to something like this:

“Young American couple living in Rome has a room to rent (max. 2 people) for short stays (max 10 days). The apartment is centrally located (near San Giovanni church and Metro A stop), well connected to buses and tourist sites (10 minutes walk to Colosseo). Quiet street, private room, plus use of bathroom and kitchen (use of washing machine for 5 euros).
The cost is 30 euros a night per person, plus a 50 euro refundable deposit. Let us know your dates and we’ll work something out!”

I don’t know the exact conversions, but lets say 1 euro = $2. We would each spend approximately $420 for a 7 night stay. I’d like to try to do the trip for under $2000. I could budget it like this:

Lodging: $420 +(any hostels for a night on day/overnight trips to places like capri), so maybe $500
Spending Money: $700
Flight: Lets say $800

That comes to $2000. I bet I could spend less than that (esp. spending money) but lets overbudget just in case I need to buy a vespa or something. haha.
