Rockefeller Turkey Meat Loaf

So yesterday I went for a hike around the Rockefeller’s Preserve (Rocky’s, as former nanny, my mom would call it), it was really pretty, but freezing! When I got there, it was sunny and breezy, and when I left it was a freakin’ blizzard. Home I went to make dinner and came up with this… so meat loaf doesn’t usually get me excited, but this came out really good. I wanted something warm and filling last night. And I’m kind of soup-ed out.

Rockefeller Turkey Meat Loaf

1 large carrot, shredded
1/2 red bell pepper, finely chopped
1/2 white onion, shredded
1 clove garlic, minced
A couple jalapeno rings, chopped up
1 1/3 lb. ground turkey
4 palm fulls bread crumbs
2 eggs
2 tbsp ketchup
1 tbsp worchestershire sauce
2 tbsp hot sauce
pinch of salt

Heat oven to 375. Saute vegetables over medium heat in a sauce pan for about 5 mins. Combine all ingredients in bowl. Mix with hands. If mixture seems too wet, add more breadcrumbs. Put in deep banking sheet and form into loaf. Spoon on some ketchup and hot sauce to outside. Bake for 1 hour.
